Champagne Mojito

Friday is here and another week has flown by.  I could not be more excited that it is already the second week of March because it means that we are that much closer to some amazing events this summer.  I saw this signature drink recipe recently on Style Me Pretty and wanted to share it with all of you.  It seems like the perfect drink to welcome spring, part wintery with the addition of champagne, while reminiscent of summer with fresh mint flavors. 

Champagne Mojito


6 fresh mint leaves

3/4 ounce freshly squeezed lime juice

1 ounce Simple Syrup

1 1/2 ounces rum, preferably 10 Cane

2 dashes Angostura bitters

2 ounces Champagne or Prosecco, chilled

*To make simple syrup, combine equal parts sugar and water in a small saucepan over medium heat. Heat, stirring occasionally, until the sugar is fully dissolved. Chill before using. You can use this to sweeten coffee, cocktails, etc.

To Mix:

In a cocktail shaker, muddle together mint, lime juice, and simple syrup to release mint oils.

Next add rum and bitters then add ice and shake.

Strain mixture into a cocktail glass then top with champagne.

Now, sip and enjoy!
